Christmas is just around the corner with only a few days to go of my christmas countdown, and today we have a recipe for a Peach & Elderflower Cooler. You know summer is definitely here when the stone fruit appears in the shops. Peaches are a favourite of mine and they’re fantastic cooked in savoury or sweet dishes, and of course drinks!

PEACH & ELDERFLOWER COOLER
Adapted from recipe by Donna Hay Magazine
INGREDIENTS
8 tarragon sprigs, bruised
½ c elderflower cordial
1½ c soda water, chilled
3 c sparkling wine or champagne, chilled
2 peaches, thinly sliced
To Serve
edible flowers
fresh tarragon leaves
METHOD
Place the tarragon sprigs and elderflower cordial in a 2 litre capacity jug. Set aside for 10 mins to allow the flavours to infuse.
Top with the chilled soda, sparkling wine and peach slices. Garnish with fresh tarragon leaves and edible flowers.
Serves 6
