Apologies for the extended radio silence on the blog recently, work & life has been getting in the way of my personal work and blog. But I’m back now ready to rock n roll in the lead up to Christmas.
For everyone out there in blog land who are keen to partake of some Christmas cheer, I’m here to help. Repeating last year’s 10 day Christmas Countdown I’ve decide to put together a few of my favourite cocktail recipes in the run up to Christmas. So starting today at Day 10 we have a Blackberry Plum Margarita. Beautiful colour and the perfect tipple for those unexpected visitors.

BLACKBERRY PLUM MARGARITA
Recipe by Half Baked Harvest
INGREDIENTS
16 fresh blackberries
2 small red plums, quartered
2 tbsp fresh thyme leaves
1 lime, juiced
2 - 3 tbsp honey (if needed to sweeten)
4 tsp orange zest
120 ml silver tequila
sparkling water, for topping
½ lime, to rim the glasses
flaky sea salt
METHOD
Run a lime wedge around the rim of your glasses and coat in flaky sea salt.
In a cocktail shaker or glass jar, add blackberries, plums, thyme, lime juice, honey (if using), and orange zest. Muddle all the ingredients together, squashing everything to release the juices from the fruit. Add the tequila. Fill with ice and shake until combined.
Strain into your prepared glasses. Top with sparkling water and extra ice, if desired. Garnish with fresh thyme.
Serves 2
