Day 8 of my christmas countdown is a bit healthier with this bright green Cucumber Elderflower Spritzer. The colour is fabulous and could almost be Kermit the Frog inspired!
It’s very refreshing on a hot summer’s day, and you can make it non alcoholic by replacing the wine with soda or tonic.

CUCUMBER ELDERFLOWER SPRITZER
Recipe by BBC Good Food
INGREDIENTS
1 telegraph cucumber
3 sprigs of fresh mint
½ bottle white wine (Sauvignon Blanc or similar)
200 ml Elderflower cordial
1 litre soda water, chilled
1 c ice cubes
To Serve
fresh mint sprigs
¼ cucumber, sliced thinly on angle
METHOD
Chop the cucumber into a few chunks, then put in a blender or food processor with the mint, wine and elderflower cordial. Whizz until well blended, then pour through a sieve set over a large bowl or jug. Tip the contents of the sieve back into the machine, whizz again until pulpy then sieve again into the liquid already collected. Discard the cucumber pulp. Chill the cucumber juice until ready to serve.
To serve, fill the glasses with a few ice cubes. Pour in enough cucumber base to come halfway up the glass, then top up with soda water. Top with a cucumber slice and some mint sprigs
Serves 6
NOTE: Replace the wine with soda or tonic for an alcohol-free spritzer.
